The universal caution when reading labels, like the comparison between US and UK Micky-D's fries, is that they put on the label EXACTLY and ONLY what their law tells them to. The UK fries may have everything the US fries do but not as many legal requirements.
Notice how the UK label 2nd ingredient says "Non-hydrogenated Rapeseed oil". That's exactly the same thing as the Canola oil the US version says. Since the last line in the UK list (cooked in non-hydrogenated vegetable oil) includes the second ingredient, that must be some legal requirement to consider cooking different from the ingredients. Both labels have the "cooked in" section.
